Steak Pitas with Marinated Red Onions and Greek Gyro Sauce

Steak Marinade
3 Tbsp red wine vinegar
3 Tbsp. Olive oil
Lemon zest from half a lemon
2 large cloves of garlic, minced
Kosher salt
Fresh ground pepper
1 ½ lbs. flank or round steak
Combine all ingredients in a large zip lock bag and mix thoroughly. Marinate for at least 2 hours
Whole Wheat pita pockets
Romaine lettuce, chopped
Cherry tomatoes, sliced in half
Feta cheese
Marinated Red Onions (recipe follows)
Greek Gyro Sauce (recipe follows)
Heat the grill. Add the steak and cook until desired doneness. Let rest for 10 minutes. Cut thin slices against the grain.
Warm pitas in the oven or microwave. Fill with lettuce, steak slices, tomatoes, Greek sauce, red onions and feta cheese.
1 cucumber, peeled, seeded, and diced
½ tsp kosher salt
8 oz. plain, non-fat yogurt
½ lemon, juice and zest
1 Tbsp. fresh dill, chopped (fresh is best!)
2 clove of garlic, minced
Fresh ground pepper
Kosher salt to taste
Place the diced cucumbers in a strainer with the ½ tsp of salt and allow to drain/strain for 30 minutes. Pat the cucumber dry with a paper towel. Combine all the remaining ingredients with the cucumber in a food processor and pulse until blended. Let sauce sit in refrigerator for at least an hour.
Marinated Red Onions
½ large red onion, sliced thin (and sliced again)
2 Tbsp. red wine vinegar
1 Tbsp olive oil
1 tsp. sugar
¼ - ½ tsp. red pepper flakes
Kosher salt
Freshly ground pepper
Combine all the ingredients in a bowl and gently stir. Cover and marinate in refrigerator for 1 hour.
