Simply, the best out there right now! Paislee Press is the very best at minimal scrapbooking which I love, too. One Little Bird. I keep going back to her products and blog for amazing inspiration. She's between a minimalist and - not. I've followed others fairly regularly for some form of inspiration or digital products, such as Cathy Zielske, and Sahlin Studio.
As someone who relishes the idea of simplifying my life (and have only made baby steps) here is a great list on getting started.
